I have recently taken ownership of a brand new Iconic Espirit Alpine with the solar bay. The car is less than 2 weeks old.
I noticed that despite having the required setting turned to on via the multimedia screen under the Welcome settings in Vehicle, the rear courtesy lights do not turn on when the doors are opened. They do turn on manually when the switch is depressed.
There is no toggle switch in the car or on the lights that I can find to turn this setting on manually. Only one button to turn them permanently on or permanently off.
All other interior lights behave as they should.
Are any other owners experiencing similar behaviors? And is there something I'm missing that makes the rear courtesy lights work with the doors?

I popped in to the dealership and even they couldn't give me an answer. Waiting on them contacting Renault. It would be good to know if this is expected behavior or a fault/quirk.
When I was in the showroom I was able to check the function of the interior lights on the techno esprit alpine which is the model below without the solarbay. It has three interior lights in the centre of the roof where the iconic has two separate lights at the back of the solarbay. The centre switch is a three position toggle switch which sets the lights to be operated by the doors when in the neutral position.
There must be a way of turning this setting on for the rear lights!
As you say lots and lots of tech to play with, will take some time to learn it all.
Other than this little quirk I'm loving the car.
I checked the Welcome setting for the interior lights and it's either on or off. The 2 rear cabin lights have a switch for each and it's either on or off. Same as your car. I'm interested in Renault's response. It is possible to phone their UK helpline or email them. Probably quicker than going to the dealer.

I spoke to the salesman today and he suggested factory resetting the car via the multimedia screen which I have done. Didn't make any difference unfortunately. He's going to raise a technical request with Renault and book me in next week for them to look at as I'm off work.
My guess is that as it's such a new model it might be software related in that the car thinks there should be a three way switch as with the non sunroof version, and is looking for the auto signal, but our rear lights only have on or off, so it won't control them via the doors. Total guess mind you.
I also got him to check the Scenic they have with the solarbay in the showroom when he was on the phone. The rear courtesy lights are slightly different in that they have no switch at all but them come on when the rear doors are opened. I can't see any reason why the symbioz should be any different.
If they mess me around I'll give Renault an e-mail. Will report back.
Just off the phone to the dealership and they've cancelled my checkup for the car on Wednesday.
Renault have confirmed that the rear interior courtesy lights are functioning as expected. i.e. they ARE NOT controlled automatically by the doors.
They say this is down to the car having a solarbay roof.
I pointed out that the Scenic has the very same roof and the lights ARE controlled by the doors, and if this is the intended functionality then it is a seriously poor design.
They suggested contacting Renault directly to complain.
The My Renault app has also started throwing a wobbly after an app update, and now doesn't connect to the car. Sigh

Every car I’ve been in for decades, I am sure the light comes on when you open the door. This has to be a design error.
I wonder if there will be a fix on newer produced cars, or even better an agreement to fix this via dealers.
Myself and an couple of others are yet to get our hands on one - was going to encourage the dealer to find a sooner one, but with the things mentioned on here (and confirmation mine is queued for a new build) will see if anything is changed
